New Coffee Shop Brews Community Connections

RAINBOW: A newly opened coffee shop on the river is quickly becoming a local gathering spot, not just for caffeine but for conversation, experimentation, and a sense of community.

Still in its early days, owners Marcus and Jennifer d’Fonseca admit they’re learning on the go. At the moment, the business is cash-only while they finalize a point-of-sale system and other details.

Rainbow Coffee offers plenty of choices beyond just a cup of Joe to fuel your day. Open at 6:30 a.m. to 2 p.m. every day, their menu includes some hearty fare like biscuits and gravy, breakfast burritos, and …….

Their focus though, is on customers. The couple is embracing feedback and expanding offerings based on requests. “We had someone ask for a dirty chai, and at first we didn’t know what that was,” Jennifer said with a laugh. “Now we do-it’s chai tea with a shot of espresso. We’re happy to learn right along with our customers.”

That same spirit has fueled their growing menu. Sugar-free syrups, almond roca and orange flavors, and Red Bull spritzers are now available thanks to popular demand. The shop also stocks alternative milks for those who avoid dairy. Looking ahead, vegetarian and gluten-friendly food options may join the lineup, though the d’Fonsecas are careful not to overpromise. “We can’t claim to be 100% gluten-free, but we want to meet people where we can,” they said.

While passing travelers are of course welcome, the owners emphasize that locals will always come first. “They’re our bread and butter, especially in the winter,” they explained. “We’ve seen other businesses focus only on wealthier visitors and end up alienating the community. We don’t want to make that mistake.”

For now, though, Rainbow Coffee remains focused on perfecting the basics: learning, adapting, and building relationships with customers-one cup at a time.
